For over 30 years Tom has been an Executive Chef. For the last nine years he has owned and operated his own restaurant “Smokin’ T’s BBQ," in Long Grove, Illinois. He is constantly creating new menu items that follow the trends while having the staying power to last. His culinary training at the Culinary Institute of America, allows him to have the broadest palette to create many unique items. He has an incredible ability to develop many distinctive food pairings. He is an invaluable resource when it comes to menu development, recipe creation, food and labor costs savings.

 

As an Executive Chef, Tom has been responsible for the operation and management of many kitchens over his career.  At the original Ditka's, on Ontario Street in Chicago he was the Executive Chef. He and his kitchen staff of over 100 served over 1,200 meals per day. There were three seatings: Lunch, Dinner and Late Dinner from 11:00 pm to 2:00 am.  Over the years Chef Tom has been responsible for serving fresh, high quality meals to customers with a total revenue of over $90,000,000

Bob’s creative passion is what drives each and every project he works on. He is well grounded in all aspects of restaurant development. Bob will lead the team and be responsible for coordination of all facets of the project. As a skilled communicator and practical problem solver, he thrives when challenged with the most complex issues. He will provide the leadership necessary for the project to run efficiently, while paying attention to the smallest detail. He focuses on reducing risks and creating solutions, the result, successful projects.

He oversaw the design, development and construction of a single location, which then expanded to a chain with over 40 locations in seven states.  Bob has been a registered architect for over 25 years and has planned and designed many projects with a combined value over $250,000,000.
